Coconut date balls recipe | energy balls

 Ingredients:


2 cups of pitted dates

1/2 cup of almonds

1/2 cup of cashews

1/4 cup of shredded coconut

2 tablespoons of chia seeds

1 tablespoon of honey

1/2 teaspoon of cinnamon

Pinch of salt

Water, as needed



Instructions:


1.In a food processor, combine the dates, almonds, cashews, coconut, chia seeds, honey, cinnamon, and salt.


2.Pulse the mixture until it is well combined and the nuts are chopped into small pieces. If the mixture seems dry, add a small amount of water, one tablespoon at a time, until it comes together.


3.Once the mixture is well combined, use your hands to form it into small balls, about 1 inch in diameter.


4.Roll the date balls in additional shredded coconut, if desired.


5.Place the date balls on a plate or tray lined with parchment paper and chill in the refrigerator for at least 30 minutes, until firm.


6.Once the date balls are chilled and firm, they are ready to serve. Store any leftovers in an airtight container in the refrigerator for up to one month.
